Healthy Olive Garden Recipes
A number of Olive Garden's recipes are quite high in both calories and fat, but there are ways to make the dishes a bit healthier. As an example, a single serving of Olive Garden Chicken Marsala packs 770 calories and 37 grams of fat. By decreasing the Marsala wine to 1/2 cup and adding another cup of mushrooms, though, you can make a healthier version of this dish that is still flavorful.
Olive Garden's classic Fettuccine Alfredo is even higher in calories and fat, coming in at 1220 calories and 75 grams of fat per serving. To make a healthier version of this dish, swap out the traditional Olive Garden Alfredo Sauce for a vegetarian sauce made with raw cauliflower, light butter, and nutritional yeast.
Adapting Olive Garden Recipes for a Large Crowd
If you'll be preparing dinner for a large group of people, you may want to try making larger versions of Olive Garden favorites. Many of the restaurant's classic recipes can be adapted for a crowd. For example, Olive Garden's Lasagna Classico can be sized up for up to 50 by increasing the ingredients to allow for six ounces of entree per person. You can also simply prepare smaller sized dishes as described in the original recipe and enlist friends to help you prepare several of them at once.
Olive Garden's Minestrone Soup can also be adapted for a large party. Triple the amount of the ingredients in the original recipe to make enough soup to feed 15 or more guests. To make cooking and serving easier, prepare the soup in a large Dutch oven or slow cooker.
