Cracker Barrel Chicken and Dumplings Ingredients

  • 1 fryer chicken[2]
  • 1 onion
  • 3 celery stalks
  • 3 carrots
  • 3 chicken bullion cubes[3]
  • 1/2 tsp black pepper

Dumpling Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. Kosher salt
  • 3 Tbsp. shortening
  • 3/4 c. buttermilk

Cracker Barrel Chicken and Dumplings Recipe

  1. Clean the chicken and remove the neck and gizzards.
  2. Chop onions, carrots and celery and place into a dutch oven, or large stock pot.
  3. Add the cleaned chicken to the pot.
  4. Cover with water and add 3 chicken bullion cubes, then bring to a boil.
  5. Reduce the heat and simmer the chicken for approximately 1 hour, or until the chicken reaches an internal temperature of 165 degrees.[4]
  6. Remove chicken from the broth and set aside an allow it to cool.
  7. Place a coffee filter inside a colander and strain the broth into a bowl.
  8. Discard strained vegetables.
  9. Measure out about 6 cups of broth and place in a dutch oven.
  10. Add 2 cups of flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of Kosher salt into a medium-sized mixing bowl.
  11. Cut the shortening into the dry mixture.
  12. Add buttermilk slowly, stirring gently until a dough is formed.
  13. Flour a flat surface, then roll out the dough until it is about 1/4" thick.
  14. Cut the dough into 1-inch wide strips.
  15. Place the dough strips onto wax paper. The strips should dry for about a half-hour to allow the dough to firm slightly.
  16. Gently remove chicken from the bone.
  17. Shred the chicken into generous chunks.
  18. Place chicken chunks into the broth and bring mixture to a simmer.
  19. Add dough strips to the broth and cook for about 5 to 6 minutes, or until the dough has expanded and resemble dough pillows.
