  • Non-stick cooking spray
  • 32 ounces frozen country-style hash brown potatoes[2]
  • 1 can condensed cream of chicken soup, undiluted
  • 1/2 cup butter or margarine, melted
  • 1 medium onion, minced
  • 1 pint sour cream
  • 2 cups shredded colby cheese, divided[3]
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Cracker Barrel Hash Brown Casserole Recipe

  1. Preheat oven to 350 F. Spray a three-quart casserole dish with a non-stick cooking spray, then set aside.[2]
  2. Allow the frozen hash browns to thaw at room temperature, then drain off any excess liquid. Consider using a colander to make this step easier.
  3. In a large mixing bowl, combine the cream of chicken soup, butter or margarine, onion, sour cream, 1 cup of Colby cheese, salt and pepper. Mix until all ingredients are evenly distributed.
  4. Fold the drained hash browns into the cream mixture. Avoid over-mixing as it can cause the hasbrowns to break apart.
  5. Transfer the mixture to the greased casserole dish.
  6. Sprinkle the top of the dish with the remaining cup of cheese.[3]
  7. Bake for about 40 minutes or until the mixture is bubbly, then serve.
