- 3 cups yellow onions
- 2 cans beef broth
- 1 can chicken broth
- 3 tbsp. flour
- 1/4 tsp. thyme
- 1/2 tsp. garlic salt
- 1 tbsp. tomato paste
- 1 tbsp. sugar
- Fresh Focaccia bread
- Shaved Asiago Cheese
Panera French Onion Soup Recipe
- Preheat oven to 450 degrees.
- Slice bread into thick slices and butter each side.
- Cut buttered bread into equally-sized squares.
- Place into heated oven and bake until crispy. This will take about 15 minutes.
- Slice onions.
- Place butter into a saucepan and heat over medium to melt.
- Saute onions in butter until translucent.
- Lightly salt onions.
- Add onions to a large Dutch oven along with any butter remaining in the saute pan.
- Add chicken and beef broth, tomato paste, sugar, flour and seasonings to the pot.
- Bring all ingredients to a boil, then reduce the heat to medium-low.
- Simmer for 1/2 hour.
- Ladle soup into oven-safe serving bowls and top with croutons.
- Liberally top soup with shaved Swiss cheese.
- Place bowls back into oven for about 5 minutes to melt cheese.
