  1. On a floured work surface, roll out the dough so it is 1/8 inch thick. (recipe for pie crust dough follows)
  2. Using a paring knife, cut the dough into 4-inch squares.[3]
  3. Place 1 tablespoon of apple pie filling in the center of each square. (recipe for apple pie filling follows)
  4. Moisten the edges of the dough with cold water and fold the pie in half.
  5. Seal the edges of the pie by pressing it with a fork.[8]
  6. Repeat this process with the remaining pastry and apples.
  7. In a deep-fryer or large saucepan, heat frying oil to 350 degrees F.[7]
  8. Fry the pies, two at a time, for 2 to 3 minutes on each side or until the crust is golden brown.
  9. Remove the pies from the oil and drain on paper towels.
  10. Sprinkle with confectioners' sugar.
  11. Serve the apple pies warm, with each person receiving two pies.[9]

  2. Add the shortening and mix with a hand blender until the mixture resembles coarse crumbs.

  4. Place the ball of dough in plastic wrap and chill in the refrigerator for about 30 minutes.
