  • 4 buttermilk biscuits
  • 4 leaves iceberg lettuce
  • 1/2 cup blue cheese dressing[3]

Fried Chicken

  • 4 chicken cutlets, pounded down to 1/4-inch[4]
  • 1 cup bread crumbs
  • 1/2 cup flour
  • 1 egg
  • 2 tablespoons water
  • Salt and pepper to taste
  • Vegetable oil for frying

Fried Green Tomato

  • 1 large, green tomato
  • 1/4 cup cornmeal[5]
  • 1 egg
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Pine State Biscuits Fried Chicken Wedgie Recipe

  1. Heat enough vegetable oil to fry the chicken in a large skillet. It is hot enough when it appears shimmery.
  2. Start the chicken by setting out 3 shallow bowls. Fill one with flour, the second with the egg and water (beat lightly), and the third with bread crumbs.
  3. Season the cutlets with salt and pepper.
  4. Coat with flour, then egg, then breadcrumbs.
  5. Place carefully in the hot oil and fry 2-3 minutes per side until they appear golden brown.
  6. Dry on paper towels.
  7. Start the tomato by slicing it into 1/2-inch circles. Sprinkle with salt and pepper.
  8. In one shallow bowl, whisk the egg. In another, mix the cornmeal and paprika.
  9. Coat each slice with egg and then cornmeal. Fry in the same pan used for the chicken for about 2 minutes per side. Let dry on a paper towel.
  10. Slice the biscuits in half. Top the bottom halves with the chicken, followed by tomato, iceberg lettuce and blue cheese dressing. Serve immediately.
