Pine State Biscuits Fried Chicken Wedgie

The Pine State Biscuits Fried Chicken Wedgie recipe is one of the most decadent you'll find. This tall sandwich packs fried chicken, fried green tomato, iceberg lettuce and creamy blue cheese dressing on a fresh biscuit for a lunchtime splurge that's packed with flavor and crunch. Highly-motivated home chefs can opt to bake their own biscuits from scratch, but pre-made biscuits or those made from refrigerated dough are fine. The restaurant's biscuits are made with buttermilk.[1]

Pine State Biscuits Fried Chicken Wedgie Recipe

  1. Heat enough vegetable oil to fry the chicken in a large skillet. It is hot enough when it appears shimmery.
  2. Start the chicken by setting out 3 shallow bowls. Fill one with flour, the second with the egg and water (beat lightly), and the third with bread crumbs.
  3. Season the cutlets with salt and pepper.
  4. Coat with flour, then egg, then breadcrumbs.
  5. Place carefully in the hot oil and fry 2-3 minutes per side until they appear golden brown.
  6. Dry on paper towels.
  7. Start the tomato by slicing it into 1/2-inch circles. Sprinkle with salt and pepper.
  8. In one shallow bowl, whisk the egg. In another, mix the cornmeal and paprika.
  9. Coat each slice with egg and then cornmeal. Fry in the same pan used for the chicken for about 2 minutes per side. Let dry on a paper towel.
  10. Slice the biscuits in half. Top the bottom halves with the chicken, followed by tomato, iceberg lettuce and blue cheese dressing. Serve immediately.
